Raw Nut Slice
This is super healthy, no cooking involved and tastes great. If you don’t tell the kids its healthy they would not know.
My kids don’t love raw nuts, however this slice is a big hit in my house. It is a great after school snack full of good fats and protein. (Lots of kids are allergic to nuts so don’t send this one to school in the lunch box….)
1 cup raw cashew nuts
1 cups dates pitted
1/2 cup dried apricots
1/2 cup nut butter (I use melrose organic brand)
1/2 cup maple syrup (the real stuff)
1/2 cup shredded coconut
Combine all ingredients in a blender until combined. Using your hands press into a lined 20cm x 20cm cake tin. (If the mix is too dry add a tablespoon of melted coconut oil)
Topping
1 1/2 cups dark chocolate (I use 70% cocoa)
1 Tablespoon coconut oil (melted)
Combine the two and pour over the slice.
Place in the fridge until set. Cut into squares. It keeps in the fridge for a week.
