Raspberry Ice Cream
This is not ice cream but don’t tell anyone and they will not know. It taste amazing, scoops like ice cream and if you set it in a tin your kids will think its from the fancy shop up the road.
Good quality ice cream is delicious but much of the cheaper varieties are full of thickeners, preservatives, emulsifiers and stabilizers, high in sugar and nasty chemicals. Stuff that I don’t really want to feed my kids.
I have come across this recipe in many books, including George Calombaris (Georgie Porgie), Sharing Food (Melbourne Grammar) and Epicure.
Its easy to make but I do use a Kitchen Aid not sure if it works on other equipment.
2 egg whites
1 1/2 cups raspberries
1/2 cup sugar
That's it. Place all the ingredients in the bowl of your mixer and start slowly increasing the speed to full. It takes time, 15 minutes. When the ice cream is pale and thick nearly filling the bowl. Place it in a tin or bowl and set it in the freezer overnight. Use it like ice cream.
