Tomato Salad
This is so fresh and a great accompaniment to any meal. I sometimes make this for lunch and add a handful of baby spinach leaves.
I often make 2 salads and a piece of grilled meat, chicken or fish for dinner. I love putting share plates in the middle of the table and everyone can help themselves.
Fresh tomatoes (don't keep them in the fridge)
Fresh mozzarella roughly torn
a few fresh mint leaves scattered
lemon zest to taste
Dressing
1 tablespoon olive oil
2 tablespoons red wine vinegar
pepper and salt
