Salmon Salad
I am always trying to shed a couple of kilos after winter. This is the perfect way to do it… delicious salads for lunch or dinner.
Super easy and high in protein, which will keep you feeling fuller for longer.
Quality ingredients is the key.
Makes one portion
150g Smoked salmon or trout (which ever you prefer)
1/2 cup green beans blanched
4 baby potatoes cooked and cut in half
10 thin slices of cucumber
1 soft boil egg (see below)
2 sprigs of dill
Combine all the ingredients on a plate and spoon over the dressing, gently lay the egg on top.
Dressing
1 teaspoon seeded mustard
1 tablespoon olive oil
2 tablespoons of white wine vinegar
pepper and salt
Fool proof soft boil egg - bring a small saucepan of water to the boil. Gently add the egg using a spoon. Stir once and set a timer for 5 min exactly. Remove and run under cold water. Peel carefully and cut. It should be perfect, fingers crossed!
