A delicious afternoon tea!
1 Tblsp butter
1/4 cup sugar or (2 tablespoons honey)
Pinch of salt
1 cup mashed pumpkin cooled
2 cups Self raising flour
2 tablespoons milk
Using an electric mixer beat butter, sugar (or honey) and salt. Add egg, fold in pumpkin and flour.
Turn onto a floured surface and gently bring dough together. Cut out scones and place on a floured tray.
Brush the top of the scones with milk. Cook in the over at 210C fan force for 15 minutes or until cooked through.
I like to serve warm from the oven with a little butter!
