Home Made Pizza

There is nothing like home made pizza.  On a cold Sunday afternoon my daughter announced she was going to make dinner for the family.  I was so excited, and sceptical at the same time, this is so out of character for her.

She is great at lots of things, but cooking does not come naturally to her.  Any attempts in the kitchen should be encouraged, I had the cook book open before she could change her mind.   These pizzas are easy to make and great if you are feeding a group.  The recipe is from Phillipas Home Baking Cook Book (all the recipes are ion the book are delicious and easy).

My girl did a great job and I will be encouraging her to continue practising in the kitchen.

Make 8 15-20 cm pizzas

500g bakers flour
1 1/2 teaspoons table salt
1 teaspoon dried instant yeast
2 1/2 tablespoons extra virgin olive oil
330ml lukewarm water
semolina, for spinkling

Topping of your choice

To make the dough,
Please the flour and salt in a large bowl and mix with a whisk. Make a well, add the yeast, then add the oil and water and mix with a clean hand for about a minute until blended. Scrape down the sides of the bowl and mix again until the dough comes away from the bowl cleanly.

Transfer the dough to a clean, lightly floured surface and knead a few times until smooth and elastic. Return the dough to the bowl.

Cover with a plastic bag and place in a warm spot for 1 hour or until dough has increased in size by 2/3.

Knock back dough cover and allow to prove for 30 minutes more.

Divide the dough into 8 and make the pizzas with your favourite toppings.

Cook at 240C fan forced for 12-15 minutes until cooked.
