Green Soup
I have the post holiday blues, it is raining and cold and I wish I was back on the banana lounge sipping iced tea with the sun shining! This soup is made from the left overs in my fridge and it tastes so good I had to share it with you, I am eating it as I write this.
2 Zucchini, chopped
1 potato, peeled and chopped
1/2 cup broccoli
1 cup fresh spinach
1 leek chopped
few sprigs of parsley
4 cups chicken stock (good quality) (or veg stock if you are vegetarian)
1 cup cooked brown rice, optional for serving.
Combine all the ingredients except the stock in the saucepan with 1/2 tablespoon of olive oil.
Cook over medium heat for 5 minutes.
Add the stock and simmer for half an hour until all the vegetables have cooked down. Blend all the ingredients together. Season to taste. Adjust the consistency of the soup to suit your taste. Add more stock or water if you like it thinner.
I like to add 1/2 cup of cooked brown rice to my bowl of soup, just fills me up more.
