Best Ever Eye Fillet
I love it when people share recipes. I am lucky to have gorgeous friends and work colleagues that share ideas and recipes with me. A couple of friends who don’t know each other have recently mentioned an amazing meal they made. I though it must be good, because their eyes light up when they talk about it and better still the recipe these girls are talking about is the same recipe… I had to try it, and my god it is amazing…. So simple but delicious!
1 eye fillet, I allow about 200g per person. I purchase my meat from J&L Meats at Prahran Market, (ask for Charlie, he will look after you) and their fillet is so well trimmed all you have to do is unwrap it and roll in the sugar. (While you are at J&L Meats pick up some Sicilian chipolatas, they are great on the BBQ with pre dinner drinks).
1 eye fillet trimmed
1/2 cup raw sugar
Olive oil
1 cup olive oil
1 tablespoon chilli flakes
2-3 garlic cloves crushed
1 cup soy sauce
Roll the beef in a little olive oil and raw sugar.
Heat BBQ until very hot.
Sear beef for 24 minutes (assuming there is 4 sides, 6 min exactly each side with BBQ lid down).
Wrap beef in 5 layers of tin foil sealing each end like a bon bon
Leave at room temperature for 2 hours
Heat oil to hot, add garlic and chilli, then remove from the heat and add soy sauce.
Slice beef and arrange on a platter, pour over the sauce.
