Pad See Ew
I have just returned from Thailand and the food was unbelievably good!! Until recently my favorite Thai dish was Pad Thai, however I have jumped ship to another great noodle dish called, Pad See Ew. It is less sweet with more veggies and spice, but just delicious. Try it at home for a quick healthy meal. (I have had it 4 days in a row for lunch!!!)
1 cup Chinese broccoli
1 egg
2 cloves garlic
1/2 cup thinly sliced pork
1 Tablespoon Dark Soy Sauce
1 cup fresh flat rice noodles
2 tablespoons light soy sauce
1 tablespoon of sugar
Sprinkle of white pepper to serve and fresh chilli to serve
Chop broccoli into 1 cm pieces and half thick stems. Heat the wok or fry pan to hot and add 2 tablespoons of oil. Cook garlic, add sliced pork and stir fry until just cooked through, add noodles, soy sauce and sugar. Be quick this dish is all about fresh and fast so don’t leave it stewing. Toss everything together and serve immediately.
