Hot Chocolate Pudding
There is something about the start of winter that makes me think of hot chocolate pudding. The kids are starving, usually cold and wet after school sport and craving comfort food for dinner.
A quick pudding is the perfect dessert and fills up the hollow legs of my teenage son. Chocolate pudding is particularly great because its made in minutes and while you are eating dinner the pudding bubbles away in the oven.
I serve it with vanilla ice cream.
(I often take this dessert to my neighbours for our pasta night – I prep it all except the boiling water, I add that when I get there and pop it in her oven).
125g plain flour
pinch salt
¼ cup castor sugar
2 teaspoon baking powder
2 tablespoon cocoa
½ cup milk
40g butter melted
1 egg
1 teaspoon vanilla essence
Combine dry ingredients together.
Combine wet ingredients together.
Add the wet to the dry and pour into a 1.5 liter baking dish.
Topping
160g brown sugar
2 tablespoon cocoa
1 tablespoon instant coffee
1 cup boiling water
Sprinkle the sugar, cocoa and coffee over the batter and ‘gently’ pour the boiling water over the top.
(an easy way to do this is to hold a metal dessert spoon over the pudding and pour the water onto the spoon).
Bake for 35 minutes at 180C until its cooked and bubbling with sauce. Let it rest for 10 minutes before serving. It will be piping hot – don’t burn yourself!
