Being gluten free often means giving up beautiful breads and pastries and makes desserts tricky… here is a fabulous chocolate pav that’s perfect if you eat gluten free or not!
This recipe was given to me by a girlfriend however, it originated from Nigella Lawson.
6 egg whites
3 tablespoon cocoa
1 teaspoon balsamic vinegar
50gm chopped dark chocolate
Pre heat oven to 180C.
Whisk egg whites to soft peaks, add sugar a tablespoon at a time. Sift cocoa and gently fold into the egg whites along with the chocolate and vinegar.<br><br>Pile high on a greased and lined tray.
Place into the oven and turn the temperature down to 150C. Bake for 1 hour and 10 minutes.
Remove from the oven and let cool. Spread with cream and fresh raspberries, strawberries and toffee shards whatever takes your fancy.
