Corn Fritters
I have just returned from Sydney where I love eating at Bills for breakfast. I always eat the corn fritters.
There is something about Bill Granger that I love! (I used to have a food crush on him). He was one of the first celebrity chefs that I loved to watch on TV and still do. I love his props, styling and his mannerisms. His food is always simple and clean. His plating up of dishes is so natural.
Often on a weekend I make corn fritters for the family. They are super easy and so tasty. So here is Bills recipe, hope my plating up would do him proud!!!
3 large corn kernels (cut the corn off the husks)
1 small red onion chopped
2 eggs
a few sprigs of coriander leaves
125g plain flour
1 teaspoon baking powder
seasoning
Avocado salad
2 ripe avocados diced
a few sprigs of coriander
juice of 1/2 lime
2 small tomato chopped
2 spring onion finely sliced
Combine all the fritter ingredients in blender and pulse until combined. I like the mixture to be course but its entirely up to you.
You can even reserve 1/2 the kernels and stir through at the end.
Heat a tablespoon of vegetable oil in a non stick fry pan. Spoon 2 tablespoons of mix into the pan and cook for 1-2 minutes each side. Fry in batches until all the mixture is used.
Make the Salad in a separate bowl season well. Spoon over the warm fritters.
My kids love bacon so I always grill a few rashes of bacon to accompany the fritters.
