Kale, Asparagus and Spinach Eggs
This meal is a plate of goodness! Kale, spinach and asparagus are all super foods and so good for you. The soft boiled eggs make this dish extra tasty.
The best way to cook soft boiled eggs is to bring a large pot of water to the boil. Stir a couple of times and gently lower the eggs into the whirlpool (this helps the egg yolk stay in the centre of the egg). Turn your kitchen timer on to 5 minutes exactly. Remove the eggs from the water and run under cold water until you can handle the egg. Gently peel the eggs and slice in half, the whites should be set and the yolks runny (fingers crossed). (This is for a size egg).
Kale, Asparagus and Spinach with Eggs
2 large kale leaves, stem removed and finely shredded
2 cups spinach leaves
3 asparagus spears chopped into slices
4 raw almonds roughly chopped
Pinch chilli flake
2 soft boiled eggs
While the eggs are boiling, add a tablespoon of olive oil to a non stick fry pan. Combine all the ingredients and fry until cooked. Place on a plate and when the eggs are cooked gently peel them, cut in half and place ontop. Season with salt and pepper
