250g left over roasted vegetables. I used pumpkin and potato.<br>5 eggs combined with 2 tablespoons milk<br>4 slices of lean ham, optional<br>3 spring onions finely sliced<br>1/4 cup tasty grated cheese<br><br>parsley and parmesan to garnish<br><br>Lay the vegetables on the bottom of a 20cm non stick fry pan. Combine eggs and milk and gently pour over the vegetables. <br>Sprinkle over the cheese and spring onions and lay the ham of top<br><br>Cook gently for about 7 minutes on the stove top until the side are starting to set.<br><br>Transfer to under the grill and continue to cook until just set, about 3-4 minutes.<br><br>Garnish with parsley and parmesan and a good crack of pepper and salt.<br><br>You can really add what ever you like, spinach, fresh peas, zucchini the list is endless.
